Frozen Peach Beerlini

It's National Beer Day, and I have a FUN one for you this week!

Today is National Beer Day, and I've been thinking about a fun beer cocktail all week... Well longer really. I love a good beer cocktail! I was thinking about doing a 'Beermosa' or an 'Aperol Beer Spritz' but the other day I was at my Mother In Law's house and she had the most amazing peaches growing on her tree, and it struck me like a lightning bolt! A 'Beerlini'! 

Not gonna lie, I was a little nervous about this one. BUT, I love a traditional Bellini, so I thought this has to be good... and it was!

In honor of National Beer Day, and as a substitute for Prosecco (which a traditional Bellini calls for) I grabbed a 12 pack of Miller High Life, 'The Champagne of Beers'. Pretty fitting, right?

Let me back up really quick. If you've never mixed beer into a cocktail, or even with some fresh juice, you are seriously missing out. 'Beermosa's' are my weekend go-to, and are super easy to make. Ever heard of a Brass Monkey? Well, that's what it is! 

So for this recipe, I grabbed some white peaches- the yellow ones were too firm from the store, although I would have preferred those- and I picked up a generic bottle of peach schnapps. I made sure to peel the peaches first before putting them into the blender with the schnapps and ice. Also, the squeeze of lemon added just the right amount of tartness to balance the sweet- don't skip it!

The finished result was soooo GOOD! A traditional Bellini can be a little sweet, and I thought the beer really balanced this out. Plus the icy consistency made it perfect for a summer cocktail! Trust me, this one is right on!

 

Frozen Peach 'Beerlini'

2 OZ Peach Schnapps

2 Cups peeled fresh or frozen peaches

2 Cups Ice

Juice of 1 lemon

2-12 OZ Bottles Miller High Life

 

  • Slice and peel peaches (I used 3)
  • Add peaches, Peach Schnapps and lemon juice to blender- pureè
  • Add 2 cups of ice and blend until smooth
  • Add 2 beers to frozen peach mixture- stir
  • Pour into pint glasses and garnish with peach slice
